The Story

Piazza Grande is a range from Mussini, one of Modena's most respected balsamic vinegar producers. The 1 Crown sits at the entry point of the range — not a lesser product, but a different one. Where the higher Crowns (3, 5, 7) gain density, sweetness, and syrupy concentration through longer ageing, the 1 Crown is lighter, fresher, and more immediately acidic, with a density of 1.1 and a lively sweet-sour balance that makes it the most versatile of the range for everyday cooking and dressing.

The vinegar is made from cooked grape must — Trebbiano, Lambrusco Grasparossa, and Ancellotta — blended with well-aged wine vinegar and matured in small barrels of precious wood. The colour is a rich, limpid brown. The aroma is pleasantly acetic with sweet notes of must. The flavour is fresh-tasting and well balanced — enough sweetness to distinguish it clearly from a standard wine vinegar, enough acidity to cut through richness and work in dressings and marinades without becoming cloying.
