Made from 100% Chardonnay grapes grown in Lérida, Spain, it is produced using the Schützenbach method — a slow, traditional fermentation process that transforms only the alcohol into acid while preserving the original aromatic compounds of the wine. The vinegar is then aged for 12 months in French oak barrels, which contribute a subtle woody depth without overwhelming the Chardonnay's natural fruit and floral notes. The acidity is a gentle 6°.
