Since 1979, Castellare di Castellina has combined exceptional winemaking with environmental protection, practising chemical-free viticulture and championing biodiversity. Each vintage label features a different endangered Tuscan bird - the 2017 showcases the Red-backed Shrike - as part of their partnership with the Italian League for Bird Protection. Their flagship wine comes from the steep, southwest-facing San Niccolò vineyard, where old vines produce one of Tuscany's most distinguished wines.

While challenging, the old vines and optimal exposure of the San Niccolò vineyard, combined with careful canopy management, allowed the grapes to achieve full ripeness while maintaining freshness.
