Voatsiperifery (pronounced vo-at-sip-er-IF-ery) is a wild pepper that grows deep in the tropical forests of Madagascar, far from towns and cultivated land. It is not farmed — it grows naturally as a creeper that winds its way up forest trees, sometimes reaching 10 metres in height. The peppercorns form at the very top of the canopy where they receive full sunlight, and harvesting them is a skilled and dangerous task carried out by local villagers between October and December. They climb to the top of the creepers by hand, picking the berries without cutting the tree or the vine, preserving both for future harvests. After picking, the peppercorns are dried for several days and sorted meticulously by hand before export. The result is one of the rarest and most distinctive peppers available.
The flavour is notably different from standard black pepper. Voatsiperifery is spicier and more robust than Piper nigrum, with a complex aromatic profile that opens with sharp, acidic notes before developing into woody, floral, and citrus tones with a distinctive hint of menthol. It has a particular affinity with chocolate — it pairs exceptionally well with dark chocolate sauces, ganache, and rich chocolate cakes, where the floral and citrus notes complement the cocoa. Beyond desserts, it brings fresh, spicy depth to meat, fish, and shellfish. Use it in a mill and grind at the last moment — the volatile aromatics are at their best freshly cracked. Avoid leaving it to infuse for too long in liquid preparations, as extended contact can push the flavour towards bitterness.
