Pairing: This distinguished wine pairs exceptionally with A5 Japanese Wagyu, chargrilled Sashi Beef, or slow-roasted Cinco Jotas Presa. The wine's complexity enhances dishes featuring wild Ceps or Trompettes. For cheese, serve with aged Fort Saint Antoine Comté or Truffle Pecorino. 

Producer: Ridge Vineyards' Monte Bello estate, with its limestone-rich soils at elevations between 1,300 and 2,700 feet, stands as an American First Growth. First planted in 1885, the vineyard's modern era began in 1969 when Paul Draper joined as winemaker. The estate practices sustainable farming and minimal-intervention winemaking, including natural yeast fermentation and minimal sulfur use.
